Kale is coming into season. Here’s a yummy, kid-friendly Kale Chips Snack Recipe!
I love the fact that 2 out of my 3 kids (Spud is hopeless) and husband love kale. After all, it’s a GREAT good food! It’s loaded with vitamins A, C and K and full of calcium, iron, fiber and a little protein. But as you know, it’s a little strange looking and can be a “scary” vegetable. I mean, Kale, it’s a little funny looking and intimidating because it doesn’t exactly scream “ Eat me!” So how did I turn my family into kale lovers?
There are three ingredients: Olive oil, salt and a really EXCITED, nonchalant mother.
Here’s how it all happened:
Last year, I threw some kale down onto the kitchen counter top: “ Hey what do you think of this?” My daughter came over to inspect, touched the leaves with the tip of her finger and took a few steps back. “What is it?” I shrugged my shoulders and said “ kale.” Then I turned away to finish with the groceries.
Naturally, because she’s 7, questions followed such as “ what is it again?” “what does it do?” “why do the leaves feel so tough?” among other things….my response was “ I think it’s one of the tastiest vegetables out there! I mean, I could eat it all day! In fact, I think I’m going to make smoothies and chips out of it and then enjoy them all by myself”. The girl took the bait and her brother and sister followed: They were not in for the smoothies ( turns out I don’t blame them because they were gross) but they were in for the chip making. It’s so terribly easy and you WILL BE ADDICTED!!
Kale Chips
Ingredients:
- 1 head of kale
- Olive oil
- Kosher salt
Directions:
- Preheat 400
- Peel the kale off of the stalks, breaking them into pieces as you go.
- Wash the kale and spread it out on a baking sheet.
- Drizzle olive oil over the kale.
- Sprinkle with salt.
- Bake in the oven for 10-20 min.
- Check the chip often to make sure they don’t burn. They should shrivel up.
- When they crisp,and are just starting to brown, take out and eat them!
They are best right out of the oven! Sometimes I serve them with chicken or fish and the kids get to eat “chips” with dinner. So tricky. Haha!
* Note: If they sit to long, I find they don’t taste as good.
We rub garlic on the pan for this one!
