Peanut Butter Cups

After months of trying to make Peanut Butter Cups this is the only recipe I created that actually works and it is also easiest Peanut Butter Cup recipe

Ingredients 

  • 2/3 cup chocolate chips
  • 1 teaspoon neutral oil, like vegetable oil
  • ½ cup Peanut Butter 
  • 4 tablespoons Butter
  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla extract 
  • ¼ teaspoon salt

Directions 

  1. In a heat safe bowl, melt the chocolate and oil together using a double boiler or a microwave.
  2. When using the microwave, microwave in 20 second increments, but if you’re using a double boiler make sure to stir until melted. 
  3. Gently squeeze the chocolate into the bottom and a ½ inch up the sides of the 6 lined cupcake tin. Pop in the fridge or freezer for 10 minutes or until set.
  4. For the filling, in a medium sized bowl stir the peanut butter and butter until smooth. Then put it in the microwave for 20 second increments until melted. Stir in the powdered sugar, vanilla, and salt in. 
  5. Load a Ziploc bag or piping bag with all of the peanut butter filling and cut a medium sized hole in the corner. Pull the chocolate cups out of the fridge. Gently squeeze the peanut butter filling across the 6 shells.
  6. Load the same chocolate bag (from before) with the remaining chocolate (feel free to gently heat the chocolate if it begins to set). Gently pipe the chocolate over the surface of the peanut butter filling, covering it completely. 
  7. Tap the cups on the counter again if needed to smooth the final layer. Pop your peanut butter cups in the fridge or freezer for 10 minutes to set completely
