Glazed Cinnamon Mini Muffins

These are SOOOOOOO YUMMY! They are perfect to wrap up and give as a gift, to serve at your child’s class holiday party or even for Christmas breakfast!

Lets get started: first, get your ingredients ready:

Next, start creaming your butter and sugar. Recently, I’ve read a few recipes that tell you to ALWAYS use a stand mixter but I use a hand held one and it works perfectly. You want the butter and sugar to be light and fluffy.

Now add the dry ingredients to the butter/sugar mixture. Be sure to add them gradually. The batter will look like this:

Add the milk and it will look like this: nice and creamy.

Make sure your mini muffin pan is lined and pour the batter into each cup.

Bake in a 350 degree oven for 20 minutes until they are nice and golden brown.

As the muffins cool, prepare the glaze by combining the cinnamon, confection sugar and milk. You want the glaze to be thick so add more sugar or milk as needed.

To finish the muffins, pour the glaze over each mini treat and enjoy!

Another amazing way to enjoy these muffins is to skip the glaze and use vanilla bean butter like the one from saltopia! Wow! Really, there are not words for how delicious this butter is!

Glazed Cinnamon Mini Muffins

Ingredients:

  • 1/3 cup butter, at room temperature
  • ½ cup sugar
  • 1 egg
  • 1 ½ cups whole wheat flour
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ½ cup milk

Cinnamon Glaze:

Ingredients:

  • 2 tsp. ground cinnamon
  • ½ cup confection sugar
  • 1 tbs. milk

Directions:

  1. Line a mini-muffin pan with paper cups and preheat the oven to 350 degrees F.
  2. In a large bowl, cream the butter and sugar together until it’s light and fluffy.
  3. Beat in the egg.
  4. In another medium bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.
  5. In batches, add the dry ingredients to the wet ingredients then add the milk.
  6. Make sure the batter is well combine.
  7. Fill a paper-lined mini muffin cups two-thirds of the way full.
  8. Bake for 20 minutes until done.

Make the Glaze:

  1. As the muffins cool, in a small bowl, mix together the cinnamon, confection sugar and milk until the glaze is smooth and slightly thick.
  2. You may have to add more confection sugar or milk to get the right consistency.
  3. Spoon glaze over the muffins and serve!
