Straight from the Farm: A Crisp Radish Salad

This fresh Radish Salad Recipe will rock your world!

Today, I opened my front door and came face to face with a LARGE bundle of radishes from my neighbor’s garden. Thank you! As I was washing them,  I started to ponder what could be done with them (other then simply tossing them into a lettuce salad).

So what is a radish really? When I think of them, I picture  a juicy, crunchy and crisp root vegetable that has a nice punchy flavor. My kids find radishes to “spicy” for them so I thought citrus and a little sugar might mellow the flavor. Here’s what I came up with. It’s a hit in my house!

Radish Salad

Ingredients:

  • 2 tbs. apple cider
  • 2 tbs. orange juice
  • 1 lemon, juiced
  • 2 tbs.olive oil
  • 1 tsp. sugar
  • salt and pepper to taste
  • 5 radishes, trimmed and each cut into small cubes
  • Small handful fresh parsley leaves
  • 2 scallions ( also in season with the radishes), thinly sliced

Directions:

  1. In a large bowl whisk together the cider, orange juice, lemon juice, olive oil, and sugar until the sugar dissolves.
  2. Taste and season with a pinch of salt and pepper.
  3. Add the radishes, parsley, and scallions.
  4. Toss gently and refrigerate for at least an hour, making sure to toss the salad before serving.
