This fresh Radish Salad Recipe will rock your world!
Today, I opened my front door and came face to face with a LARGE bundle of radishes from my neighbor’s garden. Thank you! As I was washing them, I started to ponder what could be done with them (other then simply tossing them into a lettuce salad).
So what is a radish really? When I think of them, I picture a juicy, crunchy and crisp root vegetable that has a nice punchy flavor. My kids find radishes to “spicy” for them so I thought citrus and a little sugar might mellow the flavor. Here’s what I came up with. It’s a hit in my house!
Radish Salad
Ingredients:
- 2 tbs. apple cider
- 2 tbs. orange juice
- 1 lemon, juiced
- 2 tbs.olive oil
- 1 tsp. sugar
- salt and pepper to taste
- 5 radishes, trimmed and each cut into small cubes
- Small handful fresh parsley leaves
- 2 scallions ( also in season with the radishes), thinly sliced
Directions:
- In a large bowl whisk together the cider, orange juice, lemon juice, olive oil, and sugar until the sugar dissolves.
- Taste and season with a pinch of salt and pepper.
- Add the radishes, parsley, and scallions.
- Toss gently and refrigerate for at least an hour, making sure to toss the salad before serving.
