It’s pumpkin season! Let’s put it into a breakfast chia seed pudding!Â
Ingredients
- ½ cup chia seeds
- 2 cups unsweetened vanilla almond milk ( or whatever milk you want)
- ½ cup pumpkin purĂ©e
- 2 tbs. maple syrup
- 1 tsp. vanilla extract
- 1 tsp. pumpkin pie spice
- ½ tsp. cinnamon
- Pinch of flaky sea salt
Optional Toppings
- Yogurt ( I like plain Greek for an added tang)
- Chopped walnuts or pecans
- Pumpkin seeds
- Cinnamon
- Drizzle of maple syrup or honey
Directions
- Put the milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla, cinnamon and salt into a bowl and mix to combine well.Â
- Add chia seeds.
- Mix it together really well ( chia seeds can clump together and ruin everyone’s morning)
- Refrigerate overnight.
- Stir again before serving.
- Add the toppings of choice and enjoy!Â
Tips: If you want the chia seed pudding to be extra creamy, blend the pumpkin, milk, maple syrup, vanilla and spices with a hand mixer first.
