This cucumber salad is what I made when I have zero time, no interest in cooking and cucumbers sitting around bored in my fridge. This is a delicious lemony, herby, fresh Cucumber Salad that goes well with the simplest ingredients- it’s cool, crunchy, refreshing, and so yum!

Ingredients:
- 1/4Â of a red onion, sliced very thinlyÂ
- 1 lemon, juiced
- 2Â large Cucumbers sliced thin with skin on.Â
- Two cloves of garlic, minced
- 1 small handful of fresh herbs such as cilantro, parsley, dill, mint or basil (or a combo), roughly chopped
- 2 tbs. olive oil
- A pinch of sea salt, or more to tasteÂ
- Optional spices: ground coriander and/or chili flakes
- Optional: 1Â jalapeno, seeded ( or not) and finely diced
- Optional: add a pinch of chipotle powder for a little smokey kick
Directions:
- Place the red onion and lemon juice in a large bowl, toss and let it marinate while you make the rest of the salad.
- Slice the cucumber, mince the garlic and chop the herbs then add to the bowl.Â
- Add the olive oil, salt, and optional spices if desired. Mix it up.
- Taste, and adjust salt and lemon. Don’t be shy with the seasoning!Â
