One Bowl Mediterranean Chickpea Chopped Salad
This chopped salad is meant to be eaten with a spoon!
Chickpeas, cucumbers, tomatoes, red onion, olives and feta are combined with a red wine vinegar dressing laced with garlicky goodness. I like to make this chopped salad in a tupperware container with a lid the night before ( so that the flavors have longer to mingle) and then pack it for lunch during the week. The longer it marinates, the tastier it is!

One Bowl Mediterranean Chickpea Chopped Salad
Ingredients:
- 2 tbs. high quality olive oil
- 2 tbs. red wine vinegar
- ½ tsp. garlic powder
- A pinch of salt and pepper
- 1 (15oz) can chickpeas, rinsed and drained
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, cut in half
- ½ small red onion, diced
- ¼ cup kalamata olives
- A sprinkle of pre-crumbled feta cheese
Directions:
- In a tupperware container or large bowl, combine olive oil, vinegar, garlic powder, salt and pepper. Stir or put lid on it and give it a good shake to combine.
- Add chickpeas, cucumber, toamtoes, onion, and olives to the bowl. Toss or put lid on the container and give it a good shake to combine.
- Add crumbled feta to taste before serving.
