Now lets dig in!

This recipe came about because I’ve been making beans in the Crockpot all week: I can’t get enough! After putting them in soup, stewschili and in lettuce wraps, I wanted to do something a little different. This lasagna recipe is derived from Rachael Ray and is really robust and bursting with flavor: perfect for a snow day.

  1. I haven’t had a Mexican lasagna in ages and your version looks much better than the one I made long ago. Love the beans in it.

    1. Beans are a hit! Love the fact that they were cooked in the crockpot instead of from a can!

  2. Stunning, Jennifer! I had to remind myself to scroll down to see the recipe and not just stare at the photos! Love that you chose ground turkey and love Rachel Ray =) Great choices for a perfect casserole =)
