The kids asked me what was for dinner and I gave them my best smile and exclaimed “broccoli!”

My oldest thought it was funny and took my picture.

Seriously though, look at how yummy broccoli can look… or maybe it’s the cheese…

My kids tried it and gave it a thumbs up. So here it is, The Ultimate, Very Cheesy, Kid-Approved Broccoli Casserole! Enjoy!

The Ultimate, Very Cheesy, Kid-Approved Broccoli Casserole

Ingredients:

• 1 20 oz. package frozen broccoli florets

• 8 oz. cream cheese, room temperature

• ¼ cup mayonnaise

• 2 cups grated cheddar cheese, divided into 1 cup each

• 1 tsp. garlic powder

• Sea salt and pepper to taste

Directions: 

  1. Preheat oven to 350 degrees.
  2. Let broccoli defrost and squeeze moisture out before using.
  3. Add the cream cheese, mayonnaise, 1 cup cheddar, garlic powder, salt, and pepper to a small bowl and mix well to combine.
  4. Add broccoli to the cream cheese mixture and stir to combine.
  5. Transfer broccoli to an 8×10 baking dish and sprinkle remaining cheddar over the top.
  6. Bake for 10-15 minutes until bubbly and serve.
