Sautéed Green Beans with Garlic, Onion and Tomatoes

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1 ½ lbs. fresh green beans, trimmed
  • 2-3 large garlic cloves,  minced
  • 1 yellow onion, diced
  • 1- quart cherry tomatoes, sliced in 1/2
  • 4 ½ tbs. red wine vinegar
  • 1½ tsp.dry oregano (or 1 tablespoon fresh)
  • ½ tsp. sea salt
  • ½ tsp. freshly ground black pepper

Directions:

  1. In a large skillet or sauté pan over medium high heat, add oil and then the green beans. Cook stirring occasionally until about half cooked and starting to brown, about 5 minutes.
  2. Move beans to the outside edge of the pan and add the onion and garlic and cook two minutes.
  3. Add tomatoes then all other ingredients and cook for about five minutes or until some liquid has evaporated, the tomatoes are squishy and the beans are tender.
  4. Serve hot or at room temperature.
