This Sautéed Green Bean with Garlic, Onion and Tomatoes Recipe is a real crowd pleaser. It’s perfect for a holiday dinner party OR a weeknight supper!

Sautéed Green Beans with Garlic, Onion and Tomatoes
Ingredients:
- 1/4 cup extra virgin olive oil
- 1 ½ lbs. fresh green beans, trimmed
- 2-3 large garlic cloves, minced
- 1 yellow onion, diced
- 1- quart cherry tomatoes, sliced in 1/2
- 4 ½ tbs. red wine vinegar
- 1½ tsp.dry oregano (or 1 tablespoon fresh)
- ½ tsp. sea salt
- ½ tsp. freshly ground black pepper
Directions:
- In a large skillet or sauté pan over medium high heat, add oil and then the green beans. Cook stirring occasionally until about half cooked and starting to brown, about 5 minutes.
- Move beans to the outside edge of the pan and add the onion and garlic and cook two minutes.
- Add tomatoes then all other ingredients and cook for about five minutes or until some liquid has evaporated, the tomatoes are squishy and the beans are tender.
- Serve hot or at room temperature.
