Butter – sometimes I couldn’t imagine cooking without it. It serves as a lubricant, flavor enhancer, and a means to transfer flavors. It has so many uses – sautéing, poaching, as a base and way to thicken sauces or to finish vegetables, fish, and risotto, and for baking…. Or you can just spread it on a piece of whole wheat bread. What’s better than that?
This oven roasted butter potato recipe goes a little something like this: Take a knob of butter and pop it on top of a par-boiled, smashed potato and bake until crispy. Just right on top. Congratulations, you’ve made the recipe, which is to say you’ve made a delicious potato. Enjoy!
Oven Baked Butter Smashed Potatoes
Ingredients:
- 2 lbs. red potatoes
- Cooking spray
- 1 stick of butter, sliced into pieces then melted
- Sea salt and pepper to taste
Directions:
- Pre-heat your oven to broil to medium-high heat (about 200°C | 400°F).
- Place potatoes in a large pot of salted water. Bring to the boil; cook, covered for 30-35 minutes or until just fork-tender. Drain well.
- Lightly grease a large baking sheet or tray with cooking oil spray.
- Arrange potatoes onto the sheet and use a potato masher to LIGHTLY flatten the potatoes in one piece (not too hard or they will end up mashed).
- Pour butter over each potato’s and sprinkle with salt and pepper.
- Broil until they are golden and crispy (about 10-15 minutes).
- To serve, season with a little extra salt and serve immediately.
