Baked Radishes with Lemon & Honey

Baked Radish  

End of summer/beginning of fall in New Jersey means ripe tomatoes, sweet corn, radishes, Asian greens and apples. All of it is so delicious!

Baked Radishes with Lemon & Honey

Ingredients:

  • 2 bunches fresh radishes
  • 1 ½ tbs. olive oil
  • ½ fresh lemon juiced
  • 2 tbs. honey
  • Sea salt and black pepper to taste

Directions:

  1. Preheat oven 425
  2. Combine olive oil, lemon, honey, salt and pepper in a small bowl and whisk to combine.
  3. Remove green tops from radishes and then slice up the radishes. You want them about the same thickness.
  4. Combine radishes with the lemon-honey sauce.
  5. Bake 18-20 minutes, tossing once or twice during cooking.
  6. Serve immediately.
