Leftover Thanksgiving Pizza #Sundaysupper

This Thanksgiving pizza can be done two ways: Gluten-Free and regular. I recently discovered that one of my children has a gluten intolerance and so, for the purposes of today’s #SundaySupper, my pictures were taken using a gluten-free pizza crust but I included directions using both Gluten-free and regular pizza dough. Time to dig in!

First, we start with cranberry sauce. My favorite recipe for homemade sauce is The Ultimate Cranberry Sauce and let me tell you, it’s THE BEST! Every year, with the mention of Thanksgiving, my stomach grumbles at the thought of homemade cranberry sauce. Yummy, yummy!

Once you get a nice layer of cranberry sauce down on the pizza, it’s time to add the turkey!

Next, take a look in your fridge for some leftover sides. We enjoy a variety of Thanksgiving sides but for the purpose of this pizza, I chose to use leftover roasted acorn squash and brussel sprouts.  If you want to know how to quickly roast some up, take a look at my Beautiful Roasted Vegetable recipe and follow the directions.

Next comes the cheese. To make this pizza kid-approved, I used  mozzarella, the traditional pizza cheese. Provolone would work as well and  I think a little smoked Gouda or goat cheese would be tasty on this pizza recipe too!

Bake the pizza for 10-15 minutes…and…drumroll please…here it is: a deliciously simple and gorgeous way to use up your Thanksgiving leftovers!

Leftover Thanksgiving Pizza

Ingredients:

  • 2 Gluten-Free Pizza Crusts, prepared according to package directions or 1 (10oz) can refrigerated pizza dough
  • Prepared Cranberry Sauce
  • 1 ½ cups chopped, skinned turkey
  • 1-½ cups prepared, roasted brussel sprouts
  • 1 cup prepared roasted acorn squash
  • 2-4 oz mozzarella cheese, sliced thin and cut in half

Directions:

  1. Preheat oven 400 degrees (if using gluten-free crust, use the recommended temperature on the box).
  2. Place parchment paper on baking sheet
  3. If using regular pizza crust, roll dough into a 10-inch circle on a lightly floured surface then place it on the baking sheet and crimp edges with fingers to form a rim.
  4. Spread a thin layer of cranberry sauce over the pizza crust, leaving a little boarder.
  5. Top with turkey then vegetables and sprinkle with cheese.
  6. Bake for 10-15 minutes until golden.
