Amazing Gluten Free Chicken Piccata

Ingredients:

  • 4-6 thinly-sliced chicken breast cutlets 
  • 1/2 cup good quality gluten free flour ( I like King Arthurs)
  • Sea salt & pepper
  • 4 tbs. olive oil
  • 6 tbs. butter
  • 1/2 cup white wine
  • Juice from one medium lemon
  • 1/2 cup gluten-free chicken stock
  • 1/4 cup rinsed capers
  • chopped parsley for garnish
  • Hot cooked GF noodles for serving

Directions:

  1. Liberally salt and pepper chicken cutlets.
  2. Heat 2 tbs. olive oil and 2 tbs. butter in a large pan with high sides.
  3. Dredge chicken in flour.
  4. Brown first batch of chicken for 2 to 3 minutes per side. Remove chicken and set to the side then add remaining 2 tbs. olive oil to the pan
  5. Brown second batch of chicken for 2 to 3 minutes per side. Remove.
  6. Deglaze pan with wine. Allow to simmer while continuously scraping bottom for 11/2 minutes.
  7. Whisk in lemon juice, chicken stock and capers. Check seasoning and adjust if needed. 
  8. Add all the chicken back to the pan and simmer for 5 minutes. 
  9. Remove chicken and place in serving dish. 
  10. Whisk in remaining 4 tablespoons of butter. 
  11. Pour sauce over chicken and garnish with parsley.
  12. Serve with hot pasta if desired.
