While grocery shopping, a woman saw me selecting baby cucumbers.
“Do you like those?” she asked.
“Yes, I like them” and my daughter pipes up with “I LOVE them!”
“What do you do with them?” she asked.
“Lots of things” I replied. “You can make many different kinds of salads with them.”
She tilted her head in thought “hmmmmm…”
I, being the nosey person that I am, looked into her cart. Turns out she had a package of them sitting on top along side a bag of Doritos. Both are Spud’s favorites.
Naturally, Spud asked, “How are you going to eat yours?”
The woman blushed. “Well, I don’t really know” she said. “I only put them in my cart because they looked yummy.”
Blame it on the stomach – you know, you buy something because it looks so good and you can’t pass it up.
We talked and I gave her a few suggestions on how to enjoy the baby cucumbers. I also encouraged her to pick up a bag of baby peppers since they were delicious looking as well. I love cooking with “baby veggies.”
She seemed excited.

In fact, baby cucumbers (or regular cucumber’s if you can’t find baby) are very versatile and can be used in a variety of ways. Check out these 4 cucumber recipes:

1. Marinated Baby Cucumbers Salad

These are big hit with my kids! They enjoy making them and eating the “sandwich pickles.”  Yes, these pickles turn out sweet!

First, you slice the cucumbers into sticks (You could also slice these up smaller and serve this as a cucumber salad.)

Next, nicely salt the cucumber’s to drain some of the excess water. Put them in a container with a lid and shake.

Now for the marinade:  mix water, vinegar, honey, mustard and dill seeds together in a microwavable bowl. Microwave for 40 seconds to warm it up.

Last, pour marinate over salted cucumbers and toss to combine. Place them in the refrigerator overnight before serving. The cucumbers take on a sweet, light taste and are perfectly paired with a nice hamburger or grilled chicken.

Marinated Baby Cucumbers Salad

Ingredients:

  • 4 baby cucumbers cut into sticks
  • 1 tbs. water
  • 2 tbs. apple cider vinegar
  • 1 tbs. honey
  • ½ tsp. mustard seeds
  • ¼ tsp. dried dill
  • Salt and pepper to taste

Directions:

  1. Put sliced cucumber into a lidded bowl.
  2. Add salt and pepper then cover the bowl and shake it up. This will get some of the water out of them. Set them aside.
  3. Next, add water, vinegar, honey and seeds to a small microwave friendly bowl or measuring cup. Microwave for 40 seconds until warm
  4. Pour the warm dressing over the cucumbers and toss to coat.
  5. Let the flavors “merry” in the fridge overnight. Enjoy!

2. Salad Dressing/ Crudités Dip

This dip/dressing is definitely meant for someone who likes the taste of raw garlic. I use two cloves because we love it but I warn you, it packs a punch! It’s great served as a dip with baby carrots, peppers and pita chips or simply as a great salad dressing! It’s a super yummy, green goodness-like treat! Enjoy!

I really like avocado and cucumber blended together. The garlic and scallions add a bite while the lemon adds a freshness and the spinach evens all of the flavors out. To begin, chop the veggies so that the blender has an easier time making the puree.

Next, add all of the chopped ingredients along with the oil and salt and pepper to the blender and puree until smooth. Add water, 1 tbs. at a time to reach your desired consistency. Personally, I don’t add any!

Creamy Cucumber – Avocado Salad Dressing/Dip

Ingredients:

  • 1 garlic clove, minced or crushed
  • 2 baby cucumbers
  • 1 avocado, peeled and pitted
  • 1 ½ cups baby spinach
  • 2 scallions
  • 1 lemon, juiced
  • 2 tbs. olive oil
  • ½ tsp. black pepper
  • 1 tsp. salt

Directions:

  1. Puree all ingredients in a blender until smooth, adding 1 tbs. at a time of water until desired consistency is reached (don’t use more than ¾ cup).

3. Cucumbers in Vinegar

I just made these for Stew’s birthday party next weekend. I like to serve them alone as a snack or alongside ribs. They make a nice crunchy treat that is very easy and seriously yummy!

First, cut cucumbers into sticks.

Then, slice up onion and garlic. I use red onion for appearances only. Yellow onion works great as well.

Next, measure out vinegar to water. I use store brand distilled white vinegar and it works beautifully!

Add all of the ingredients to a container with a lid , shake and then place them in the refrigerator overnight.  Voila! So easy!

Cucumbers in Vinegar

Ingredients:

  • White vinegar
  • 4 baby cucumbers, sliced into sticks
  • water
  • ¼ red onion, diced
  • 1-2 garlic cloves, sliced


Directions:

  1. Put onion and garlic in the bottom of a container with a lid.
  2. Add cucumbers.
  3. Measure out vinegar and water: 3 parts vinegar for 1 part water.
  4. Allow to marinade overnight in the fridge.
  5. I promise you, this will be devoured!
