Mini Sweet Potato Pies #SundaySupper

Mardi Gras is French for “Fat Tuesday” and refers to the last day of Carnival season in New Orleans –basically it’s a time to party and indulge before the beginning of Lent. To honor this tradition, La Cocina De Leslie is hosting #SundaySupper and all of the participants have come up with some great, decadent, finger-lick in’ good recipes that are worth checking out and cooking up!

For my contribution, I cooked up a sweet appetizer: Mini Sweet Potato Pies. These are amazing and you will not believe how quick and easy they are to make! Warning – these taste so good — you may end up eating 3 or 4! I took a short cut with the crust, using Pillsbury’s and I think they came out wonderful!

What are your plans?

To start, get all of the ingredients mashed together in a bowl. Notice, I cheated with the egg whites. If you’re separating them yourself, you will need 3 large eggs.

Next, roll out the pie crust and cut out circles (I had my 5 year old use a drinking glass to cut circles in the dough). Carefully place the pie-crust into the mini-muffin tins. Aren’t they pretty?

Using a fork or spoon, fill each pie shell to the top with the sweet potato mixture.

Top with marshmallows (if you wish) and Bake for 20-25 minutes in a 350 degree oven. Magically, my kids all started showing up in the kitchen once the smell of baking cinnamon started filling the air…yum…delicious!

Mini Sweet Potato Pies

Ingredients:

  • 1 stick unsalted butter, softened
  • 2 medium sweet potatoes, cooked (directions here) and skins removed
  • 1/2-cup sugar in the raw
  • ½ cup brown sugar
  • ½ cup sweetened condensed milk
  • 1 tsp. vanilla
  • ½ cup egg whites
  • 1 ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 1 package (two sheets) Pillsbury Pie Crusts
  • 1-cup mini marshmallows (optional)

Directions:

  1. Prepare sweet potatoes by cooking them in the oven
  2. Preheat oven to 350 degrees
  3. Roll out piecrust and cut into circles.
  4. Put pastry circles into a greased mini muffin pan.
  5. In a large bowl, add the sweet potatoes and mash with a fork.
  6. Next, add the butter, sugar and milk and mash until well blended.
  7. Add vanilla, eggs, cinnamon and nutmeg; mix well.
  8. Pour mixture into the prepared pie shells.
  9. Top with mini marshmallows (if you wish)
  10. Bake for 20-25 minutes until set. They are done if pieced with a fork and the fork comes out clean.
  11. Arrange on a serving platter and serve as a sweet, decadent appetizer for Fat Tuesday/Mardi Grass! Party on!

  2. The problem with making tasty bites like this is that it is easy to eat more then you would with a big pie because you tell yourself that it is just one bite. 🙂

  5. Your post has a picture of sweetened condensed milk but the recipe you posted calls for evaporated milk. Which do you use?
