It’s kale season and I have a TON! This is one of my favorite ways to cook it up: with a combination of sausage and potatoes! It’s fall in a skillet!
Meaty, leafy, starchy and comforting, this is a one pan meal that the entire family will love! Dig in!
Potato, Sausage & Kale Skillet
Ingredients:
- 2-3 tbs. olive oil
- 4 medium red potatoes, cut into bite sized pieces
- 2 tsp. Dried thyme
- 2 tps. paprika
- 6 Sweet Italian Sausages, cut into bite sized pieces
- 1 medium onion
- 3 garlic cloves, diced
- 1 small bunch kale, stems removed and leaves torn
- 1/2 lemon cut into slices
Directions:
- Heat 2 tbs. olive oil in a large 15-inch skillet over medium-high heat . Add potatoes (cut side down) and cook without stirring until they begin to turn golden brown. Stir and continue cooking until all sides are crispy, about 5-7 minutes. Depending on the size of your pan, you may have to do this in 2 batches. Season potatoes with salt, pepper and thyme.
- Add another tbs. of olive oil and the sausage to the potatoes. Cook until all sides of the sausage are crispy, about 4-5 minutes. Once crispy, add onions and cook until just tender, stirring frequently for 5-7 minutes.
- Reduce heat to medium and add the garlic, stirring for one minute.
- Add the kale. Stir often and cooking until the kale is wilted, about 3 minutes.
- Add ½ lemon-worth of slices to the pan then squeeze the other ½ lemon over the top of the dish and serve.
- *If the kale overcrowds the pan, remove the potato sausage mixture and sauté the kale by itself before adding everything back to the skillet.
