This is my husband Matt’s easy frittata recipe. This frittata is so simple to make and 100% customizable so feel free to swap out the ingredients and make one that your entire family will LOVE!

Matt’s Easy Frittata Recipe
Ingredients:
- 6 eggs, beaten
- ½ cup fresh parmesan cheese, grated
- Pinch of sea salt and pepper
- 1 tsp. butter
- 1 small red onion, diced
- 1 small red pepper, diced
- 1 handful fresh spinach
- Note: feel free to use any fresh vegetables that you have from broccoli to asparagus to tomatoes to peas…. just swap it out in place of the peppers and spinach!
Directions:
- Preheat oven to broil setting.
- In medium size bowl, using a fork, beat together eggs, ½ the parmesan cheese, salt and pepper.
- Heat 12-inch non-stick, oven safe sauté pan over medium high heat.
- Add butter to pan and melt. Add onion and sauté for 3 minutes then add red peppers and sauté for 2 to 3 minutes.
- Once onions peppers are soft, add spinach and let it wilt.
- Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.
- Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy add cheese and broil for another minute. Remove from pan and cut into 6 servings. Serve immediately
