This might be the easiest and most delicious Carrot Salad Recipe that I have ever made. Seriously…and it was all Peanut’s idea.
In this house, we are always on the look out for new, kid-approved ways of serving vegetables. Recently, my daughter started talking about carrot salad and together, we went to the pantry and pulled this together. She loved it so much that she was jumping up and down with enormous amounts of joy — and I was happy that we found a new way to serve carrots. Some of the other ways we enjoy carrots in this house are in the form of fries, soup or hidden in muffins.
How to do you like to serve carrots?
Easy Carrot Salad
Ingredients:
- 4 cups fresh carrots, shaved into ribbons
- 3/4 cups almonds
- 3/4 cups dried pineapple pieces
- 1/4 cup mayonnaise
- 2 tbs. sugar
- 2 tbs. milk
Directions:
- Place carrots, almonds and dired pineapple in a large bow and toss to combine.
- In a small bowl, stir together the mayonnaise, sugar and enough milk to make it a dressing-like consistency. Pour over carrots and almonds then toss to coat.
