This week’s plan will keep you warm this fall and full of in-season fall vegetables like potatoes, cauliflower and apples. Simply print the grocery list, go shopping and start cooking!
I plan 4 nights worth of meals for my family and “wing” the rest depending on leftovers and kids activities. This week I’m making:
Monday: Easy Fall Pork Tenderloin with rice
Tuesday: Quick Potato Soup & Roasted Cauliflower with baguette
Wednesday : Crockpot Beef Brisket served on buns with coleslaw
Friday: Baked Salmon with Honey Mustard Sauce over romaine ( optional: side of rice)

- 1 ½ lbs Pork tenderloin
- 3 ½ lbs. Beef Brisket

- 4 (4-6oz) salmon filets

- Olive oil
- Sea Salt
- Dijon mustard

- BBQ sauce of choice
- Soy Sauce

- Dried thyme
- 56 oz(es) of chicken broth
- 1 (10oz) can cream of potato soup
- Rice for tenderloin dinner and salmon dinner(for a fast dinner, I suggest microwavable packets)

- 2 sweet onions
- 1 onion
- 1 head garlic
- Fresh parsley
- 1 lemon
- 1 large cauliflower head
- 6-8 yellow fleshed potatoes ( like Yukon Gold)
- 2 heads of Romaine lettuce

- Butter
- Grated white cheddar cheese
- 1 ( 8oz) block cream cheese
Bakery
- Baguette
- Potato buns for brisket
